Grilled Street Corn w/ Chipotle Butter

The Corn:
6 Ears of Corn

1/2 Cup Olive Oil

1/2 tsp AM Smoked Salt

1/2 tsp Smoked Paprika

1 Tbsp Sugar

The Butter:
1/4 Lb (1 stick) Butter
1 Chipotle Pepper from can
2 Tbsp Mayonnaise
1 Tbsp AM Smoked Salt
1/2 tsp Black Pepper
1 Tbsp Sugar

Parmesan Cheese

For the corn, combine olive oil with spices and brush on corn.  Grill or broil until charred. 
For the butter, pulse all ingredients with room temperature/softened butter until smooth.  Chill until ready for use. Garnish with lime wedges, parmesan cheese and chipotle butter.
