Strip Steak w/ Chickpea Chopped Salad

The Spice Rub:

4 Tablespoons Ground Coriander

2 Tablespoons Chili Flakes

1 Tablespoon Salt/ Pepper

The Steak:

4-8 oz. portions of New York Strip Steak

The Salad:

1 Cup Diced Bell Peppers

1 Cup Diced Cucumbers

½ Cup Chickpeas (cooked; canned ok)

¼ Cup Diced Red Onion

3 oz Feta Cheese Crumbles

¼ Cup Chopped Cilantro

The Dressing:

1 Tablespoon Dijon Mustard

2 Tablespoons Olive Oil

3 Tablespoons White Balsamic Vinegar

Salt/ Pepper/ Sugar to taste

Whisk dressing ingredients together. Combine with salad ingredients in a mixing bowl and

marinate for at least 20 minutes prior to serving. Crust all sides of steak with spice rub and allow to

rest at room temperature for about 15-20 minutes.  Heat grill or sauté pan with olive oil. Sear all sides

of steak for about 20-30 seconds. Finish steak in400 degree oven for about 12 minutes to achieve

medium rare to medium cooking temperature
