Curried Okra Stir-fry
lb okra chopped
onion thinly sliced
cloves garlic thinly sliced
Fresno peppers chopped
pc ginger thinly sliced
On low-medium heat, combine onion, garlic, peppers, and ginger with drizzle of oil. Let bloom for 1-2 minutes.
Add 2 Tbsp of garam masala and 2 Tbsp turmeric to pan and stir lightly for 1 minute.
Add diced tomato to pan, stirring until mixture becomes pasty. Add oil as needed.
Add chopped okra, along with 1 tsp salt and 1 tsp pepper. Let cook for 3-5 minutes, stirring occasionally. Garnish with scallions and mint, and add garam masala to taste.
