Indonesian Peanut Sauce

Ingredients

cup onion, small diced

garlic cloves, chopped

Kaffir lime leaves

tbsp Indonesian Sambal or Thai Red Curry Paste
2
tbsp fish sauce
1
tbsp sugar
cup extra crunchy peanut butter
¼
cup sweet dark soy sauce (Kecap Manis)
2
tbsp oil
tamarind concentrate or lime juice, to taste
chili flakes, to taste
water

Preparation

Step 1

In a sauce pot, heat oil and sweat the onions.

Step 2

Add hand ripped kaffir lime leaves, garlic and dried chili allow to cook down a bit with caution as to not burn the garlic.

Step 3

Add sambal or red curry paste, tamarind concentrate and allow the paste to heat.

Step 4

Add peanut butter and a little water to thin out the sauce. Reduce heat to low.

Step 5

Season with fish sauce, sugar and tamarind/lime juice to desired flavor. Add sweet dar soy to darken and finish.

Step 6

If the sauce is too thick, add water to thin out. If the peanut sauce breaks and the oil separates, remove from heat and once cool, rewhip and it should return desired texture; cold water will help too.
