Khao Soi

Ingredients

chicken drumsticks

cups of chicken stock

tablespoon of fish sauce

cup coconut milk
tablespoons of red curry paste

teaspoon of cardamom
1
tablespoon of curry powder
2
teaspoons of turmeric
1
boiled egg, halved
noodles (egg noodles or fettuccini)
wonton skins
pickled shallots
fresh shallot
fried shallot
bean sprouts
scallions
cilantro
fresh ginger
peanuts
chili oil

Preparation

Step 1

In a large pot, add drumsticks and mixture of red curry paste, cardamom and turmeric

Step 2

Add coconut milk

Step 3

Add fish sauce and mix together

Step 4

When color is nice and vibrant, add chicken stock

Step 5

Cover and allow to simmer until chicken is cooked

Step 6

Cover the bottom of a serving bowl with bean sprouts

Step 7

Add noodles (cooked) to serving bowl

Step 8

Add two drumsticks on top of noodles

Step 9

Add splash of coconut milk to bowl

Step 10

Add another handful of bean sprouts

Step 11

Add a generous portion of curry broth

Step 12

For garnish, add boiled egg, scallion, fresh and pickled shallot, fried shallot, ginger, cilantro, lime, fried noodles and drizzle of chili oil. Add peanuts for extra crunch and enjoy!
