Khao Thom Mhaat – Sticky Rice Banana Tamale

Khao Thom Mhaat. This is a request someone sent me in my DMs. A banana leaf steamed parcel filled with lightly sweet coconut sticky rice, banana and textural black beans. Steamed, stuffed, wrapped and bound together…pretty erotic huh?! But seriously, I’m impressed that this was a request and I’m honored to share this sweet treat with you. I hope it sparks some fond memories of Thailand for many of you and for those just being introduced to this, welcome and enjoy!

Ingredients

sweet sticky rice
bananas
banana leaves
coconut milk
shaved coconut
sugar
sweet black beans

Preparation

Step 1

Soak sweet rice for 24 hours in lukewarm water.

Step 2

Drape your fabric over the steaming basket and pile rice evenly on it. Let steam.

Step 3

Combine 2 cup coconut milk with 1 cup sugar. Add a pinch of salt and simmer for 2-3 minutes. Remove from heat, stir, and refrigerate.

Step 4

Prepare banana leaf wrappers by soaking briefly in warm water. Cut bananas length-wise.

Step 5

Remove sticky rice from steamer and let cool. Drizzle coconut milk mixture over rice and mix.

Step 6

Arrange sticky rice on banana leaf along with one slice of banana, shredded coconut, and a line of black beans. Roll the banana leaf like a tamale.

Step 7

Secure pairs of banana tamales with string. Steam for 10 minutes.
