Mom’s Tofu Curry

Ingredients

head cabbage chopped

block medium-firm tofu
½
onion chopped
1-2
garlic cloves minced
½
cup chopped scallion
1
Tbsp red curry paste
cup vegetable broth
¼
cup liquid aminos
red chilis
oil
sugar

Preparation

Step 1

Over low heat, sweat out the onions and garlic in your oil. Add the curry paste gently stir for 1 to 2 minutes until well mixed.

Step 2

Add the cabbage, vegetable broth, aminos, and a sprinkle of sugar. Close the lid for 1 minutes to allow the cabbage to steam.

Step 3

When cabbage has softened, stir the cabbage to evenly coat the cabbage in the curry sauce.

Step 4

Add the tofu cubes with another sprinkle of sugar and scallions. Close the lid once again without stirring, Once cabbage and tofu have reached a desired firmness, remove from heat and gently stir once again. Top with chopped chiles.
