Nam Prik Ong – Thai Pork and Tomato Dip

Ingredients

lb ground pork

cup diced tomatoes

cup diced red onion or shallots

tbsp Thai shrimp paste
Thai chilis

Dip:
Thai eggplant
green beans
cucumber
pork rinds

Preparation

Step 1

In a mortar and pestle, grind the garlic cloves, Thai chilis, and a pinch of salt together. Add the shrimp paste, and small amounts of cilantro and tomato for flavor and consistency until a coarse paste is formed.

Step 2

In a large pan, cook the onion in the oil on low heat for a few minutes until they begin to sizzle and “bloom”.

Step 3

Add your paste to the onions and stir until the flavors have married.

Step 4

Add the rest of the tomatoes to the pan and lightly stir until the tomatoes begin to break down.

Step 5

Add your ground pork and salt to taste, then keep lightly stirring until all the pork has cooked thoroughly.

Step 6

Add cilantro, scallions, and some water as needed until the mixture reaches desired consistency.

Step 7

Spoon and serve with sliced cucumber, green beans, quartered Thai eggplant slices, and pork rinds.
