Sesame Burger Buns
Combine warm water, sugar and yeast in a bowl, allowing the yeast to bloom and activate for about 5-10 minutes. It will start to foam on the top surface.
While the yeast is blooming, place both types of flour and salt into the stand mixer and stir until evenly distributed.
Slowly drizzle the melted butter into the dry mix and add 1 egg.
Using the dough hook attachment, turn on the mixer to low/medium speed.
Gradually add the yeast liquid
Allow mixer to run on medium for about 3-5 minutes until the dough is elastic and separates from the edges of the bowl. Depending on the humidity of the room, add a little more flour or water as needed.
Remove dough and knead on a dusted surface and form into a ball.
Once fully kneaded, place the dough into a stainless bowl that has been coated with a little oil and cover with a clean kitchen towel.
Allow dough to room in a damp warm place to proof for about 1 hour.
After the first proof, the dough would have doubled in size. Punch the dough and remove from the mixing bowl; slightly knead again on a dusted surface and shale into a long loaf shape. Cut the dough into 8 even portions and shape them into round balls.
Lightly spray a baking pan or lay parchment paper and place the dough balls slightly separated form each other, about 2-3 fingers width apart. Cover the dough with a clean towel again and repeat the proofing process for another hour. The dough should expand and rise some more.
Set the oven to Bake at 375 degrees.
Once the dough has finished its second proof, gently brush an egg wash over the top of the buns. While the wash is still wet, sprinkle sesame seeds on top.
Bake the buns for 15-20 minutes and once fully cooked, allow to cool before serving.
