Strip Steak w/ Chickpea Chopped Salad
The Spice Rub:
tbsp ground coriander
tbsp chili flakes
tbsp salt/ pepper
oz. portions of New York Strip Steak
cup bell peppers, diced
cup cucumbers, diced
cup chickpeas (cooked; canned ok)
cup red onion, diced
oz feta cheese crumbles
cup chopped cilantro
tbsp dijon mustard
tbsp olive oil
tbsp white balsamic vinegar
salt/ pepper/ sugar to taste
Whisk dressing ingredients together. Combine with salad ingredients in a mixing bowl and marinate for at least 20 minutes prior to serving.
Crust all sides of steak with spice rub and allow to rest at room temperature for about 15-20 minutes.
Heat grill or sauté pan with olive oil. Sear all sides of steak for about 20-30 seconds.
Finish steak in 400 degree oven for about 12 minutes to achieve medium rare to medium cooking temperature.
