Yum Plamuk – Thai Squid Salad

Here’s an awesome salad for a poolside or sunny day treat. Awesome as a side dish or stand alone star!

Ingredients

Salad:

lb squid -cleaned and sliced thinly

head lettuce
1
red onion thinly sliced
1
tomato thinly sliced
½
cup Chinese celery leaves
½
cup western celery stalk
woon sen (glass noodles)
Dressing:

Thai bird’s eye chili, diced
½
cup cilantro stems
½
cup minced garlic
¼
cup lime juice
sugar
fish sauce

Preparation

Step 1

Remove glass noodles from their package and set in cold water.

Step 2

In a mortar and pestle, combine the cilantro stems, minced garlic, and sugar and pound briefly until it becomes a coarse paste.

Step 3

Squeeze two limes (about ¼ cup) and add 3 tbsp fish sauce to the mixture and stir. Add more sugar to taste.

Step 4

In a large bowl, combine and mix the lettuce, celery, tomato, and onion.

Step 5

Cook the glass noodles in boiling water for 5-10 seconds, drain, then add them to the salad.

Step 6

Cook the squid in boiling water for 2-3 minutes, until the squid curls at the edges. Alternatively, it may be grilled.

Step 7

Add cooked squid to the salad bowl and toss with dressing.
