Chicken Satay Skewers

The ultimate street food: meat on a stick! My Thai-inspired Chicken Satay Skewers are fun for all occasions and all ages. The smokiness of the chicken combined with the nuttiness of the peanut sauce takes finger food to the next level.

Ingredients

Skewers:

lbs of chicken thighs, thinly sliced

cup of coconut palm sugar

cup of coconut milk

Peanut Sauce:

tablespoon of red curry paste

tablespoons of coconut milk

teaspoon of fish sauce

cup of chunky peanut butter
tablespoons of sugar

ounces of water

Preparation

Step 1

Skewers: place chicken into a freezer bag and add ALL the ingredients

Step 2

Seal bag, mix it together and let rest overnight. Don't forget to soak the bamboo sticks!

Step 3

Spear bamboo stick lengthwise through the center of each chicken piece, cut to desired size

Step 4

Press flat so they cook evenly

Step 5

Broil on high for about 5 mins

Step 6

Serve with peanut sauce and a side salad
