Elotes-Cuban Street Corn

Grilled Street Corn w/ Chipotle Butter

Ingredients

The Corn:
6
ears of corn
½
cup olive oil
½
tsp AM smoked salt
½
tsp smoked paprika
1
tbsp sugar
The Butter:
¼
lb butter (1 stick)
1
chipotle pepper from can
2
tbsp mayonnaise
1
tbsp AM smoked salt
½
tsp black pepper
1
tbsp sugar
Garnish:
cilantro
lime
parmesan cheese

Preparation

Step 1

For the corn, combine olive oil with spices and brush on corn. Grill or broil until charred.

Step 2

For the butter, pulse all ingredients with room temperature/softened butter until smooth. Chill until ready for use.

Step 3

Garnish with lime wedges, parmesan cheese and chipotle butter.
