Khao Pad Nam Prik Pao – Fried Rice with Chili Paste

Ingredients
day-old rice
garlic
Thai chilis
red bell pepper
scallion
cooked green beans
Thai basil
cucumber
egg
Thai chili paste (nam prik pao)
fish sauce
sugar
oil
fried shallots
Preparation
Step 1
Soft boil egg for 5 minutes, remove from pot and drop into ice water.
Step 2
Heat up a drizzle of oil in a large skillet on medium-high heat. Add chopped bell pepper, green beans, scallion, and chopped garlic. Stir and allow to sweat for about 1 minute.
Step 3
Add 2 tsp smoked chili paste, hand-ripped Thai basil, day-old rice, chopped chilis along with a drizzle of fish sauce and pinch of sugar. Stir together and fry.
Step 4
Serve and garnish with sliced cucumber, fried shallots, soft-boiled egg, a dollop of chili paste on top.
